Our anchovies (Engraulis Encrasicolus) are fished exclusively from the Cantabrian Sea during the spring finishing season. They are cleaned and prepared traditionally according to the impeccable standards of our master salt curer, and they are cured for a minimum of 12 months.

Expertise meets tradition in this product of the very highest quality, with an intense taste and soft texture.

We produce our renowned anchovies by individually selecting the very best fish caught using sustainable fishing methods, which allow us to minimise our environmental impact.

A PIONEERING FAMILY SINCE 1884

Conservas FREDO LA ESTRELLA DEL NORTE was founded in 1884 by Don Chiaffredo Nasari, who had spent many years selling salt-cured anchovies in his native country of Italy, following in his family's footsteps.

His entrepreneurial spirit and drive to create the best product brought him to one of the world's greatest fishing areas for anchovies: Cantabria….

At Fredo, we're firmly committed to environmental protection, regional development and the creation of a 100% sustainable product.

Our anchovies are fished exclusively from the Cantabrian Sea during the spring fishing season and are prepared by our filleting team , who have over 30 years of experience. The team uses fully artisan methods, following the traditions and expertise of the fishing villages where authentic Cantabrian spring anchovies were first prepared: Santoña and Laredo.

Any fish that aren't sold as spring anchovies are used to create fish sauce, meal and bait. The energy that we use comes from our own solar panels, and we hold sustainable fishing and organic farming certificates and Quality Management System certification.
